J'ai trouvé cet article (désolé en anglais) qui devrait vous convaincre aussi à ne plus mettre la voile maxi recommandée par la marque.

SAIL SIZES BIGGER THAN RECOMMENDED

Basically you can sail anything if you want to and if YOU personally are happy.

Today, sails have good quality and are stable.
So, when you are planing in the sail’s right wind range, a sail which is only slightly bigger than the biggest, recommended sail will not feel too big (if it is rigged properly and not too full!) What may happen is, that due to the dimensions and extra power you might have more spin-outs.

But the main problem is the handling – the handling "non-planing", the handling before you get planing, the handling when getting to plane, the handling in maneuvers.. ..

What does get worse when using too big sails:
1) handling
2) "lightness"
3) maneuverability
4) planing through maneuvers
(because of weight and point 1 and 3) and maybe (not always)
5) early planing.

? Why early planing?
The bigger the sail, the more it is difficult and takes longer to position the rig correctly - especially on small boards.
It takes more effort and power to pump.
And the higher weight of the rig pushes the board deeper in the water.
The combination feels heavy.
